Yummy Cheesy Broccoli Salad

This afternoon since it hit 17 degrees Celsius I decided that the little man and I should go for a walk before Tim got home.  So when he woke up from his nap and had his lunch I loaded him up in the stroller and off we went to the local supermarket.  Right about when I was leaving my subdivision I wondered if I had bitten off more than I could chew, but we made it!!!  7km round trip.  My legs are sore now but it was nice.  Got my two books waiting at the library for me and also picked up dinner fixings which included this yummy yummy salad.  It is so good that Tim is eating the rest of it right now, for an after dinner snack!

Blueberry Pie Cravings

So the other night (a few weeks back).  I had this terrible craving for blueberry pie.  I like blueberry's but don't make them part of my normal diet as they are not my favorite berry.  My son on the other hand LOVES them.  He'll eat pound after pound of them.  During the summer when we go to the Farmer's Market we buy 2lbs of Blueberries every week and he'll eat them all by Wednesday of the same week.  He loves them in pancakes, muffins, french toast, you name it he'll eat it.  I'm not as crazy about them so it was weird for me to crave them and it wasn't just for one day it was for three weeks before I gave it.  I found this recipe on-line and was very please with the outcome.  Tim and I bought a new camera around Christmas time and he has been trying a few things out to try and get the best food photos which seem to be harder to do than just regular pictures.  It's a work in progress but hopefully we'll get it right one day!

Homemade Fish and Chips

So the other night Tim and I were feeling adventurous and decided to do something we haven't done since our little one came along.  We cooked a meal together!  Back before dinner revolved around the little monster's choice of the day/week, we use to make an effort every Saturday night to cook together, enjoy some good wine/beer and talk a little other than just kinda talking in passing as we both go to do our own thing for the night.  It's been a while and to get back into the swing of things we decided to try one of our old favorites Fish and Chips with Tartar sauce, vinegar and a bit of lemon.  For not deep frying for several years (about three) and not cooking together it worked out quite nicely.  I would definitely make it again!

Pumpkin Pie!

I haven't posted many recipes lately, I've been trying some new ones and want to try them more than once before I give them out.  So here is my thanksgiving recipe for Pumpkin Pie and Whipped Cream.

Pumpkin Pie

Ingredients:
2 eggs
1/2 can (28 oz/796 mL) pumpkin NOT pumpkin pie filling
1 cup (250 mL) packed brown sugar
1 tsp (5 mL) ground cinnamon
1/2 tsp (2 mL) ground nutmeg
1/4 tsp (1 mL) ground ginger
1/4 tsp (1 mL) salt
3/4 cup (175 mL) evaporated milk
1 (9-inch/23 cm) unbaked pie shell

Basically you mix it all together and put it in the pie shell.  I made my own because my food processor makes it take about 3 minutes.  It's fantastic!  If you haven't used your food processor to make dough of any kind your missing out.  Try it ASAP!!!

Eggplant Parmesan

Last night for dinner this is what I made and it was great hit with hubby and the baby.

Ingredients:

2 Eggs
2 Tbsp fat-free milk
1 cup Italian-seasoned dry bread crumbs
2 lbs of eggplant
2 teaspoons extra-virgin olive oil
1 large onion, finely chopped
4 cloves of garlic, minced
1 (28 oz can) of crushed tomatoes
1 (141/2 oz can) of diced tomatoes, I used stewed
1/4 cup red wine
2 tsp dried basil
pinch of salt
pepper to taste
1/4 teaspoon sugar
1 cup part-skim mozzarella, grated
3 tablespoons grated parmesan cheese

Directions:

Preheat oven to 575 degrees fairenheit.  Lightly beat eggs and milk together in a shallow bowl to dip eggplant into.  Place breadcrumbs in another bowl.  Dip eggplant in egg mixture and then coat in bread crumbs.  Lay on cookie sheet.  Lightly spray eggplant with nonstick spray.  Bake until eggplant is soft and lightly brown, about 25 minutes.

Oatmeal Raisin Cookies

So this is my version of a low-fat oatmeal raisin cookie.  I was asked to make cookies by my Husband and my baby... and he's so cute with his little coo's of "Ookie" how could I turn him down?! (Now did I mean my husband or the baby? >:))
