Getting back to menu planning

For the longest time I use to organize what we would eat all week.  I found it very helpful and a good way to organize my points and keep on track when I was doing Weight Watchers.  I haven't gone back to WW since I had my baby.  I have thought about it but now that I live on a very tight budget I choose to spend my money on organic food for my son and almost anything else baby related. 

Tonight, I decided to wing it a little a give my husband his last taste of beef for probably the next 6 weeks... unless he breaks me down.  Tonight's dinner was almost entirely from the farmer's market.  We had Crash Hot Potatoes, Organic NY steak on a bed of organic Arugula and spring mix.  I also added some red pepper because my little man is not a fan of Arugula.  Tim finished off his meal with a beer and I had a big glass of water.  We might have some of the new Frozen Yogurt I got from the supermarket this past weekend.  Haven't fully decided yet. 

So now that I've rambled for a bit here is my menu plan for the week:

Monday - Purple Potatoes, NY steak, Arugula and Spring mix.  Red pepper.

Tuesday -  Chicken Picatta and Stuffed Tomatoes

Wednesday - Salmon baked in foil w/ Grilled Vegetables

Thursday - Eggplant Rollatini

Friday - Red Snapper with Beans and Arugula

Saturday - Wild Mushroom Risotto with Peas

Sunday - Chicken Cacciatore with a fresh salad

I'll probably make some kind of dessert for Saturday/Sunday night.  I'm thinking maybe the jam squares since I bought some homemade raspberry rhubarb jam at the Farmer's Market this past weekend. 

I'm also trying to find a really healthy smoothie recipe. I want something that tastes good, preferably doesn't use bananas and has flax seed oil in it.  Any ideas?  I'm thinking yogurt, berries of some sort, a tablespoon of flax seed oil and maybe some granola on top...  not sure.  I want it to be easy to make and good for me.  Any ideas?  Send them my way!
